The backbone for this gin is Juniper and Coriander where the seeds and berries are lightly crushed, Angelica root and the subtler flavours of the Angelica leaf are used in conjunction with Winter Savory, a plant not dissimilar to Rosemary but with more subtle notes. These four botanicals offer a smooth, elegant and light base gin, to which we add freshly distilled Chamomile. This flower has long been used in herbal remedies due to its high level of antioxidants such as terpenoids and flavonoids; our extraction process ensures that these are preserved in the gin itself. The chamomilla Matricaria species we use is grown here in our Secret Herb Garden and has recognised anti-inflammatory and antidepressant properties; just smelling our gin is a soothing experience although we recommend you drink it for maximum benefit. Responsibly, of course…Cornflower petals have a wonderfully astringent flavour which balances the crisp apple flavour of the Chamomile perfectly. Cornflower is known to stimulate the appetite which may explain the moreishness of this fabulous gin; its enticing azure blue colour comes from these petals which are harvested and hand dried with care to preserve the flower’s essence. This a wonderfully smooth and soothing gin that marries the majesty of nature to the craft of the distiller perfectly.
